Liquor

The traditional Chinese distilled spirits are the most familiar. Distilled alcohol with sorghum or other grains as the main raw material, also known as shochu, laobaigan, and burning knives etc.

Sake

Divided into Japanese sake, Chinese sake and Korean sake.

Japanese sake is made from rice and natural mineral water. After making koji, making wine, and finally brewing, through parallel compound fermentation, a mash with an alcohol content of about 18% is brewed. After that, lime is added to make it settle, and the original sake of sake is made by pressing.

Chinese sake is brewed with high-quality spring water and magnetic valley millet. The color is light yellow or colorless, clear and transparent, and pleasantly aromatic. Its sour, sweet, bitter, astringent and spicy flavors harmonize. The alcohol content is probably above 15%-17%.

Korean sake, Korean sake can generally be divided into two categories: "pure rice" and "hon brewing". The alcohol content is between 15 and 17 degrees. Most of the entrance is very dry but mellow, suitable for refrigeration to 7 to 12 degrees before drinking.

Japanese Shochu

Shochu, like sake, is more popular in Japan. There are also wines with the same name in China and South Korea.

For shochu, "yaki" means distillation-this is a kind of alcohol that is fermented and then distilled. Generally, the alcohol content is above 25 degrees, and the highest can reach above 60 degrees.

The raw materials are mostly sweet potatoes, rice, and barley. After the Japanese shochu factory has opened up, there are shochu made with brown sugar, chestnuts, perilla, black beans, vegetables and even milk.

Because of its reputation, even the best shochu is not too expensive.

 

Aperitif

Aperitifs (Aperitifs), as the name suggests, its main feature is that it has an appetizing function. Because it is mainly consumed before meals, it is also called pre-dinner wine.

The aperitif is mainly prepared by adding the roots, stems, leaves, medicinal materials, spices, etc. of plants as raw materials of wine or distilled spirits.

Most of the traditional aperitif varieties are: Vermouth, Bitters, and Anise. Most of these wines have been added with spices or some plant materials to increase the flavor of the wine.
